Cosimo Argenti grew up in the small town of Teulada, Italy, where seasonal cooking was a big part of everyday life. He moved to Bari to study nutrition science and Mediterranean culinary arts, where he spent much of his time in local markets and kitchens. He loved to visit Caffe Stoppani del 1860. There, he would meet older adults from the local community and was inspired to adapt traditional dishes to help them manage various health conditions.
